The Story: Óscar e Francisca Chacón are Costa Rican coffee producers. In 2005 they joined the micromill revolution, bought a depulper, and controlled quality and price. They pioneered Honey and Natural processing, adjusting drying. After 2008 earthquake cut utilities, Francisca built raised beds. Las Lajas cultivares coffee on Farma including Calle Likes, Calle San Juan, Los Angeles, Los Pinitos, Sabana Redonda and Sabanilla.

The Black Diamond Natural is different from a normal Natural due to its intentional curing process, in this case the drying period takes 15-22 days. The slow drying demands producers to constantly check temperature and movement of the beans so they dont get heated, the objective is a slow dehydration, slower than usual, not allowing the temperature to rise abruptly. The Diamond process will not harm the beans and allow the sugars of the mucilage to cold crystallize giving a sweeter, clear and brighter cup of coffee.
