Our relationship with Finca Soledad began with coffee and quickly turned into something much bigger. High in Ecuador’s cloud forest, Pepe Jijón tends how trees like old friends, crafting coffees full of florals, berries and bright, lively acidity. When Pepe visited us in Porto, cuppings turned into long conversations, eating pasteis de nata, and bit walks. What started as a business trip became a friendship, build on a shared belief that coffee can be a force for good, for people, for farms and dor the forests that surround them.
Pepe developed the “Wave” process which is a reference for the different temperatures, going from higher to lower, that the coffees undergoes in fermentation tanks and refrigerators. The result is a clean floral and citric cup with incredible clarity and syrupy texture.
